  • 200 g Spaghetti
  • 6 clove Garlic (sliced)
  • 4 tbsp Olive oil
  • 0.5 tsp Red chili flakes
  • 2 tbsp Parsley (chopped)
  • 2 tbsp Parmesan (optional)
  • 1 tsp Salt

Instructions

    Cook spaghetti in salted boiling water until al dente. Reserve 1 cup pasta water.

    Heat olive oil on low. Add sliced garlic and chili flakes. Cook until garlic is golden (not brown!).

    Add cooked pasta to the pan. Toss with a splash of pasta water.

    Add parsley. Toss until well coated.

    Serve with parmesan if desired.

The key is cooking garlic slowly — burnt garlic ruins the dish.
